Swap out SAN Drives for Larger Drives without truncation

Can anybody tell me if there is documentation out there on how to swap drives for a bigger drive and avoid truncation?

Example:  I have 20 300 GB Hard Drives that I want to swap with 600 GB drives.

Is there anywhere the procedure to do this is documented?  If not what would I have to do to implement?
