Interference with wireless keyboards and mice?

Hello!

We have an office of about 30 staff all with wireless dell keyboards and mice. They occasionally will start lagging badly and have a "mind of their own" so to speak. Our IT team can't work out what the issue is and they are brand new, but I am wondering if it's possible that having so many in close proximity would cause interference between each team member's mice and keyboard and is causing these issues? 

Online it is saying it's not possible but wanted to see if anyone has any suggestions of how to resolve this issue.
