Setting Dell 5110cn printer to print only in black and white on Mac

Hi,

I am using a Dell 5110cn with MacOS 11.2.1 (Big Sur). What I'm trying to do is set it so it always prints in black and white and not color.

When I try to print, I see this dialog:

No option to choose black and white. If I go to system preferences, I get this:

And under options, I get nothing:

Any advice would be appreciated.
