e525W Document scanning issues

I'm having a few very frustrating issues with scanning using my new Dell e525W all-in-one. Recently the printer went offline for everyone, so I reinstalled the software. I see two options for scanning -- using the Printer Hub and using the Document Hub. Is there a better way? I have two issues:

1. I can't see how to scan a multiple page document as one file. I've looked at community messages, and they mention that after the first page is scanned I should see a checkbox under the PDF file format selector. Unfortunately, I don't get that option.

2. The only paper sizes for scanning are A4, A5, A6, B5, B6, and Letter. I'm in the US and would like to scan Folio or Legal size documents. I do not use the international paper sizes and do not wish to see those. I'm OK seeing them, but would like to see some US paper size options.

I'm a pretty technical guy and a software developer. I'm amazed at how difficult this printer is to use. Can anyone at least get me going? The printer is connected to my network using WiFi and I am connecting to it (it appears) using an IP6 address. My computer is connected to the network with an Ethernet cable.

Dell Printer Hub (DPH) has an option called Source.  The pulldown list for Source are "Flatbed" and "Feeder (scan one side)."  If you select "Feeder (scan one side)." the Document Size pulldown option list includes Legal.  Note: Duplex is not supported for this product.

For multiple pages question, DPH supports saving scans as PDF .  Click on the Save Option and make sure Save as File Type has PDF as the selection.

Selecting Save as PDF still saves all of the documents separately. If I have a 5 page packet I want scanned, I don't want 5 individual PDFs. I want one PDF file with 5 pages in it. I can't figure out how to do that either.

I'm having the same problem with multiple scanned pages being saved individually rather than in one file. Did you ever find an answer?
