Unable to update Win1022h2 (And Win11)

Hello!

I'm currently working on a company with more than 50 NUCs Dell Optiplex 7080 micro factor, we use them for the MTR on Windows and they all have Windows 10 IoT Enterprise.

For the firsts devices, we used to have a protocol to update Win10 to the last update and then update it to Win11. Last year we started having problems with the Windows Update, several errors beside the REALLY slow download and installing time. I'm currently writing this from one NUC that has been stucked on this image for at least an hour:

Before that, the installer of Win1022H2 gave us this image but we were unable to keep going from there:

We tried everything. Safe boot, windows repair, updating all Dell Drivers. Nothing is working. We are really worried about the possibility of having to change the computers, because the older ones worked perfectly.

Does anyone here had the same problem and knows how to solve it?
