Could I use the i9-11900k with the 5090 sff?

The dell website says it supports up to i7-11700 according to this. Although its chipset is a Q570. I also found a build on user benchmark with a i9-11900. This chipset is compatible with i9-11900k according to this. My only concern would be that the motherboard couldn't supply 125w that the CPU requires????

I don't care if the cpu is power limited as long as its on par or better than the i9-11900(assuming it runs).

you can always upgrade 5090 SFF psu to 300w psu or the 360w psu of 5090 MT which would fit perfectly.  the issue of installing 11900k in SFF is the weaker cooler of SFF compared to MT where you can install a premium tower cooler.  If you leave the SFF side panel off then you can install the tower cooler too.

also -k cpu is recommended to have VRM heatsink installed to support it.

Be careful as the documents you refer to are for the tower and not the SFF which you have. It is possible that your PSU is only a 200W unit and that, in all likelihood, would not support the i9 you mentioned. According to the specs found here, the i7-11700 is the best you can go as it draws 65W which is acceptable.

basic online psu calculator estimate that if only nvme or sata ssd is installed and there is no discrete gpu, mechanical hdd or dvd

Load Wattage:191 W
Recommended PSU Wattage:241 W

or

Recommended PSU Wattage:245 W

load wattage is the minimum psu needs to be.

seems 200w psu would be just about borderline good enough.
