How to configure 2x S4112T-ON to 4x N1148P

Hi All!

In the past we hired a consultant to setup our switches.
Lately I have been verifying their configuration to find out it wasn't installed as per our request.

We have 2 S4112T-ON working as coreswitches. These 2 are connected using VLT on 2 100GB interfaces.
We have 4 N1148P working as access switches. These 4 are linked together as 1 big stack.

What we asked is that a breakout cable is used between the coreswitch and the 4 access switches, and this again for the other core switch.

The breakout cables where installed, yet not configured.
What was installed and configured is a 10GB cable from the 1th coreswitch to the 1th access switch.
And a 10GB cable from the 2nd coreswitch to the 4th access switch.

The configuration that was used for the "Uplink" port per core switch (which I think is configured wrong).
interface ethernet1/1/11
description ASW01-int4/0/27
no shutdown
switchport mode trunk
switchport access vlan 8
switchport trunk allowed vlan 3-6,9-12,14-16
spanning-tree guard root

Now I am looking in to properly configuring the breakout cables to the access switches.

We have 3 VmWare servers connected to the core switches, a NAS and an uplink to our firewall, all redundant.
And for the connection between the core and access switches I'm looking into something like below.

As far as I understand this should be no problem with these switches so I'm hoping somebody can point me in the right direction.
