Office 2016 (volume) baked into image has my name in it

I've created an image using Parallels Desktop on my Mac, and I had forgotten to not install Parallels Tools and desktop integration. So it automatically created an account on the VM with my own name. I also installed Office 2016 (volume license, not 365 ProPlus), and it had my own name and initials in Word Options under "Personalize your copy of Microsoft Office."

I created the image as I wanted it, installed all updates, set some default backgrounds and a small set of apps. I removed the account with my own name and Parallels Tools and made a generic admin account. In sysprep unattend.xml file, I used that account as a template. I then generalized the image, and captured.

Upon deploying to machines, though, I'm noticing that Office is still personalized with my own name and initials, even on domain accounts.

So I tried using DISM tools to mount the WIM, then I reg load'ed the registry files and searched high and low for all references to my name and initials, and removed them when found. I also did the same for Default user's ntuser.dat file, as well as the same for Administrator.

But after commiting changes to the WIM and deploying it, I'm still seeing my name and initials in there!

This is so frustrating, as I've invested more than 2 whole work days on this image.

Any ideas?
