allow you to add NVMe (M-Key) and/or SATA (B-Key) SSDs to a desktop via a PCIe x4/x8/x16 slot, upgrading older systems with fast storage. They are generally plug-and-play, but M.2 SATA drives require an additional 7-pin cable connection to the motherboard.

why does m.2 sata ssd require the 7 pin cable?

The 7pin is what is actually transferring the data from the m.2 SATA SSD. The PCIe M.2 adapter is only supplying power to the SATA drive. The NVMe drive is able to use the PCIe lanes to communicate with the CPU. The SATA drive has to use the SATA controller which is a seperate chipset going through the 7pin. Essentially, they are 2 different forms of communication and the M.2 adapter typically won't do that translation for SATA. You'd need to look into a RAID controller in order to avoid using a 7pin. The raid card acts as its own SATA hub, translates the data to PCIe, and sends it to the CPU.
